アフリカ ブルンジからニュークロップが届きました！
みかんの葉のようなフレッシュなハーバル感と、柑橘の爽やかさ。アプリコットやプラムの果実感に、飴玉のような甘い余韻が心地よく広がります。

【農園情報】
ブシンデウォッシングステーション(WS)はブルンジ北部カヤンザに位置します。カヤンザはブルンジのコーヒー生産の中心地であり、高い標高の丘地が広がるエリアです。 このWSの近くにはキニャンゴナ川が流れていす。その影響で標高の割に湿度が高く、ゆっくりと乾燥が進むことが特徴です。また、精製に使用する水源は湧き水とこの川からの引水を使い分けています。
このWSで中心となるのはウォッシュドです。生産量の60%を水洗式で精製しています。ブシンデWSではミューシレージを取り除いた後、シェード下でのハンドソーティングを行っています。このプロセスはブルンジとルワンダ特有のもので、濡れた状態でしか判別出来ない欠点豆の除去を目的としています。

【ウォッシュドプロセス】
WSに持ち込まれたコーヒーチェリーはフローティングタンクに入れられ、シンカーとフローターに分けられます。その後、ベッドに広げてハンドソーティングを行い、重量を計ります。
チェリーはパルパーで果肉を剥がされた後、ファーメンテーションタンクへ移されます。ここでは約12時間のウエットファーメンテーションを行い、カナルでの水洗と比重による4段階(A1 ~ A4)のグレーディングが行われます。その後、24時間ソーキングを行います。ウェットパーチメントの状態で6時間プリドライ(陰干しでの乾燥)とハンドソーティングを行います。アフリカンベッドに移動させ、約20日間かけて乾燥させます。

【農園情報】
初夏にピッタリなフレッシュさあふれるコーヒーです！ブササ ウォッシングステーションはブルンジ北東部、ムインガに位置します。ムインガはコーヒーの生産量こそ多いもののウォッシングステーションの数が少ない環境です。大きなポテンシャルを秘めており、今後の動向が世界的に注目されています。
このウォッシングステーションは大きな寒暖差が生じ、高品質なチェリーの栽培が可能な1,800mまでの地域からチェリーを受け入れており、精製に必須の水源は湧き水を使用しています。また、周辺にいくつかのチェリー収集所を配置することで、生産者たちはより近くまでの運搬で済むこととなりました。また「農業技術支援」をはじめ「登録農家向けの保険や「農具のレンタル」「前払いでの資金援助」など様々なサポートを行っています。地域コミュニティ全体と共にスペシャルティコーヒーを通じて成長していくことを目指しているウォッシングステーションです。
