<h3> ABOUT THE COFFEE</h3>94Celciusは、ボリビア・ユンガスの中心ウチュマチで活動する生産者、ルシア・ママニと5年間にわたり協働してきました。彼女はソル・デ・ラ・マニャーナ・プログラムの積極的なメンバーであり、厳密さ・ビジョン・献身を兼ね備えた新世代生産者の象徴です。豊かな谷に広がる農地で、ルシアは自らのビジョンを映し出すように精緻で洗練された、そして未来志向のコーヒーを育てています。今回のロット「ユニコルヌ」は、自然・技・継承の調和を体現する特別な一杯。カップの中では、ジューシーなプラム、ヌテラを思わせるまろやかさ、そして繊細に広がるバニラの香りが重なります。 &lt;注意事項&gt; ・豆の状態のみの販売となります。

ラクトックウォッシュト製法とは？
収穫したチェリーを発酵させる際に、乳酸菌を利用して発酵環境を制御するプロセスです。これにより、甘さやまろやかさ、爽やかな酸味が引き立ち、より複雑でユニークなフレーバーが生まれます。

バリスタ仲間だった、ピーター氏・クラウス氏・キャスパー氏の3名によって創設されました。ピーター氏がCEO兼生豆の買付け担当、2006年のワールドバリスタチャンピオンのクラウス氏が店舗のクオリティコントロールを担当、2008年のカップテイスターズチャンピオンのキャスパー氏が焙煎を担当し、生豆から1杯のコーヒーまでの全ての過程において高いクオリティが担保されてます。
また、常に生産者との強いつながりを持ち、農園からコーヒー豆を直接購入するダイレクトトレードを行っています。 ABOUT THE COFFEE</h3>ボリビア・ウチュマチ地域に広がるUluri農園。アンドレスさんが叔父から受け継いだ小さな土地を、奥さまフランシスカさんと共に2017年から再生し始めた農園です。標高1,370〜1,430mの高地に位置する約10ヘクタールの敷地は、手つかずの原生林に囲まれ、ゲイシャやパカマラといった希少な品種を家族の手で丁寧に育てています。すべての工程は家族で管理され、「ファミリー・ラン」の温かさと誇りが息づく農園。取引先のCoffee Collectiveは、市場価格を大きく上回るクオリティ・ボーナスを支払い、その努力と持続可能な農業を支えています。
